All about shelf life

Often we are asked about the shelf life for Schmayo.  Unlike mayo, which is mostly oil and can go rancid quickly, Schmayo is closer in form to a bottle of ketchup. So, while the FDA generally states three months for ketchup-like products once opened, the truth is they can last much longer.  Every time you open a container of a shelf stable product you shorten the product's life. The product comes in contact with oxygen and light, and it can lose moisture. So tip one, keep the lid on until you need to use it. Refrigeration also helps extend the life of a opened product, so unless you are going to plow through a jar of Schmayo in a week or less (but if you do, good for YOU!) , keep it in the fridge. Tip two, stay cool. The biggest problem foods in jars and bottles face is cross contamination.
