Often we are asked about the shelf life for Schmayo.  Unlike mayo, which is mostly oil and can go rancid quickly, Schmayo is closer in form to a bottle of ketchup. So, while the FDA generally states three months for ketchup-like products once opened, the truth is they can last much longer.  Every time you open a container of a shelf stable product you shorten the product's life. The product comes in contact with oxygen and light, and it can lose moisture. So tip one, keep the lid on until you need to use it. Refrigeration also helps extend the life of a opened product, so unless you are going to plow through a jar of Schmayo in a week or less (but if you do, good for YOU!) , keep it in the fridge. Tip two, stay cool. The biggest problem foods in jars and bottles face is cross contamination. We created Schmayo® because we had to quit fatty, greasy, traditional mayonnaises. Even the "healthy" versions are super caloric, or made with all kinds of funky ultra processed ingredients.

But we missed mayo – it has qualities unlike any other condiment. It has utility, it binds and spreads and is benign in flavor. So we decided to create a product that could step in and do the heavy lifting, without all the calories, cholesterol and other nutritional baggage. A product that was familiar enough so folks who were looking to eat a little healthier could make the conceptual leap. And we wanted it to be all natural with no weird ingredients.

And the reason we created this site? Much like mayo can be the base for many sauces and dishes, Schmayo has even more versatility. And we are here to show you how. While we may post some step by step recipes, most of what we intend to do is to suggest ways to use Schmayo as mayo substitute, then point you to our favorite recipes.
